This cake was created for Priyanka who named the cake!
She says “it tasted a lot like an “Indian Summer” because the frosting tasted like Shrikhand, a chilled and strained yogurt dessert and of course the highlight of summer, mangoes!”
She had requested a cake that used as many flavors of home as possible. The cake was for an Indian festival called Rakshabandhan, which celebrates brothers and sisters.
What we came up with was:
Pistachio cake, soaked in Cardamon syrup that is also used to marinate fresh mangos as the filling, and saffron creamtop frosting.
